Mini cupcakes (vegan)

I plan on making vegan chocolate cupcakes for a gathering tomorrow and was debating on making them into mini cupcakes. If I do this, I'm really afraid they'll turn out too dry. Does anyone have suggestions about how long I should bake them? Or should I just make the regular size? Any help would be nice. Thanks!

  1. I haven't actually made vegan cupcakes yet, but my experience with ones made in the co-op bakery has been that they are dry (any size). I would recommend adding a little extra moisture.

    1. Since you will be baking- use some applesauce instead of the typical fat source used (usually butter or even veg. oil especially if vegan). The applesauce will give them moisture and flavor but won't mess with the chocolate. You could also add some carob chips too. I would make them regular size and bake them a typical amount of time. You can sub applesauce for any fat in any baked item straight across and it's wonderful- I use it in lots of things and they are always much moister than using veg. oil.
