best beet salad

It seems as though beet salads have become a fairly omnipresent menu option (no complaints from me), but it's hard to find a truly exceptional one. I recently went to Snack Taverna and had a PHEMOMENAL beet salad with fava beans,watercress, some lemony dressing and topped with toasted almonds. Are there others out there that I should try?

          I love the beet salads at Rue 57, Quality Meats, and Enoteca Barbone.

            Although, overall, I found the food at Artisanal disappointing, the one dish that was delicious was the beet salad.

            At Eleven Madison Park, Chef Humm does truly amazing things with beets. Currently, they are only on the lunch menu.

              The beet salad at Tabla is also pretty phenominal; fresh beets, goat cheese, all topped with a cripsy pancetta "sheet"... hard to describe, but the flavors all melded perfectly. Had it in the upstairs dining room a little over a month ago.
