Teaching a Snack Class! HELP
I am teaching a summer school snack class this summer to 65 second and third graders. I have lots of ideas for snacks but here's the problem. I don't have an oven, and no microwave. I also have a tight budget of $600 for 65 kids for 20 days of cooking....
Any suggestions would be great!

Homemade peanut butter in a processor and/or jam on the stovetop if you've got one
Chocolate covered strawberries or some sort of fondue

Tuna Salad variations-- my fave is onion, red apple, celery, and dill

How about making ice cream in coffee cans? I've made this with kids before, and it is always a success, plus it gets them nice and tired out! I think you could get teh ingredients at a place like Costco pretty cheaply.

I teach summer school to children with special needs. The dirt cups are great. I also have done ants on a log- celery with peanut butter and raisins (just make sure there are no peanut allegeries), scrambled green eggs and ham (using food coloring after reading the Dr. Suess book, pancake faces using chocolate chips and cherries (some mixes come in a shakeable container) , Jello gigglers with cut out cookie cutters are fun too. Also made macaroni and cheese. have fun teaching! I brought in my skillet from home to use.

try makeing a triffle, its an english dessert nd its a good way to get kits to eat fruit,u need fruit, sponge, jam, cream, stock syrup(2parts sugar to 1 part water and let reduce and let it go cold and prepare this first)okey take ur sponge and layer it with whatever flavour jam u want strawberry is best, cut into cubes, place at bottom of dish.then prepare your fruit and place it ontop of the sponge.poor over the stock syrup just enough to coat the fruit and soak into the sponge.then whip the cream and pipe ontop, work ur way from the insde out.then sprinkle with grated chocolate(option). if doing this for adults replace the stock syrup with rum....Mmmm and check out www.google.ie

If the recipe has a photo you can point your cursor to the title of the recipe and a picture will pop up.Kudos to you for taking on that many kids!
In fact, that website has an entire section devoted to kids snacks. Here is that link:

How about wraps....do a google search or try a few on your own, but kids would surely like things wrapped up in tortillas. The first thing that came to my mind was yogurt parfaits. We make them at our house with homemade granola, but you could buy some and a little goes a long way on a parfait. Just layer yogurt with some fresh or frozen fruit and granola. Look at familyfun.com for other snack ideas, they have some good ones.
