Arepas help needed

I found the P.A.N. arepa cornmeal and decided to try making them.

The first batch were hockey pucks. The second batch was even worse.

I'm not sure what I'm doing wrong: Overkneading? Trying to make them too thick? I'm pretty sure the problem is in my technique (i.e., I don't have one), and I couldn't find any old threads that address the issue.

  1. I've only made them once or twice, but they came out nice. No kneading involved. So here's the recipe I used:

    2 1/2 c milk
    1/2 stick butter
    1 3/4 c arepa masa
    1 tsp salt
    1 Tbsp sugar
    1/2 lb gratd mozzarella
    2 Tbsp veg oil

    Bring milk to simmer, remove from heat and stir in butter.
    Combine arepa masa, salt, sugar and cheese in bowl. Add to hot milk and stir 2 minutes until you have a soft dough.
    Form into 12 thin patties.
    Cook in cast iron pan with very little oil.

    Takes me about 45 minutes from start to finish.
