where can i get fresh bulk crabmeat (for crabcakes)?

my catering client made her decision late for a party next week and i can't order through any of my usual contacts. i'll go anywhere in the LA area - i need about 8 pounds of lump meat.

          Call Fish King before you venture out. They are wholesale as well as retail.

            The canned gourmet grade lump meat actually works adequately for most recipes. Trader Joe's carries some in their deli cases and Costco carries larger sized cans as well.

            Just remember that the cans must be refrigerated (even prior to using). I recommend making garlic mayo from scratch for the cakes.

              Concur. The biggest mistake actually comes during production when people tend to *over*handle the crab meat, turning the large lumps into shreds, at which point they might as well have gotten lower quality crab meat.

              I've also found the canned stuff at Whole Foods. Really, if there's a seafood place that you trust, I'd buy it there.

                A second concur. My mother in-law from Maryland makes awesome crabcakes. She buys the cans from Costco or Trader Joes. She was actually just in town - have two large cans of Phillips crab meat still in the refrigerator.

                  Check out How's Market too for Phillips canned crab meat. Most of the time the price is much less than Costco.

          2. IMP (San Pedro & 7th) would be the first choice for Blue Crab, but I don't think their open till tue?.
            Trader Joe's Claw meat (1 lb can is 7-) is better tasting than Costco's Backfin and half the price. We just made 50 Stuffed Crab-Cream Cheese Tempura Squash Blossoms and the Crab tastes great!
