Try calling the Hilton at Miami Airport (Blue Lagoon area). In the website they said they have kosher food available for room service, so maybe they offer the same at their restaurant for lunch, upon request.
Additionally, there's a listing of officially kosher restaurants in Miami at www.koshermiami.org
You can also check http://www.zabihah.com for a listing of halal locations, which are similar (if not the same) as kosher.
