Tried something that turned out good. Roasted poblanos, skinned and gutted for stuffing. Microwaved a sweet potato until soft. Put in bowl, added hummus, zhug (Israeli chile paste), lemon juice and crumbled cotija cheese. Mashed it all together, added salt and pepper, stuffed the poblanos. Coated with olive oil, Put them on the grill for a bit. Tasty, healthy.

Yum. Sounds similar to something I did spontaneously a while ago. Baked sweet potatoes. Cut in half the long way. Carefully took out the insides and mashed them with yogurt, feta, and s&p to taste. Stuffed insides back into the skins and rebaked in the oven until nice and brown.
