Ssam bar closing earlier?

adam May 24, 2007 12:46 PM

Does anyone know why Ssam Bar has started closing at 12, as opposed to staying open late-night?

    My guess is because:

    1. Ssam Bar is now slammed the second they open for dinner, putting pressure on the kitchen.
    2. Chang et al. want to focus their energies on moving Noodle Bar to a new space and opening up Ko in the current Noodle Bar space.

My guess is that they now have a considerable dinner crowd. No longer a necessity to remain open late to pay the bills. Cooks (the late-nite folks) can't afford it anyways. Go early guys.

It seems silly not be to be open late-night at least Thurs.-Sat.. Wasn't that the original concept of this place? I was in there recently on a Wednesday, and they ended up turning away multiple groups of befuddled diners between 12-12:30am. I guess its back to Blue Ribbon for a late-night fix!
