Help, I want to suprise a friend who is a recent Chicago transplant. Is there anywhere in Seattle that serves Chicago-style Polishes? Complete with that nuclear-green relish?

The o-n--l-y place that serves a Chicago Polish with pepper (and celery salt) is the hot dog stand at Pike's Place Market. (Across from the Newstand.) Sadly, no beer with it.

There is a hole in the wall hot dog stand north of Boeing Field on the west side of the street that parallels the runway. It serves the full deal Chicago dog. I would imagine you could get a polish dressed the same way. The place is very small and you will probably have to eat outside or in your car. IMHO the best sausages in town are made by Bavarian Meats in the Pike Place market. Don't know if they will dress their products Chicago style, but their meat products are hard to beat.

I think you're talking about Matt's Famous Chili Dogs. That's the original store on East Marginal Way, but they have a few others now around the ares. I wouldn't know an authentic Chicago-style Polish dog, but theirs are damn good. My personal favorite is the chili tamale, however.
