Marcel Desaulniers Rocky Road Cake Anyone?

Has anyone made this elaborate cake? Thinking of making it for DH for Father's Day---he LOVES Rocky Road anything. Just wondering if it's worth all the work. I think it will probably cost $50 to make!

  1. Which book is it in? I have made Death By Chocolate. It took hours and hours over the span of a couple of days to make and I don't even want to remember the calorie count. Also have made his Chocolate Damnation which is very good.

      It is from the Death by CHocolate book. Were the hours and hours worth it?

        Rocky road in not in there, I checked yesterday but Death By Chocolate cake is definitely in that book.

    2. I haven't made this, but if you love chocolate and can prepare the components over time, I'm sure you'll find it worthwhile.

      Does anyone by chance own Desaulniers' Desserts to Die For? I loaned mine and never got it back, and I want to be able to make the Cranberry Crostata.

          Crust: Combine 1/14 C. ap flour, 1 tsp. sugar and a bit of salt on the bowl of an electric stand mixer, mix briefly. Then add 1/2 C. chopped walnuts LESS 2 TBS, and combine. Add 4 Tbs. chilled unsalted butter cut into 1" pieces. Mix abbout 2 mins. until the dough has a rough look to it. In another small bowl combine 1 egg yolk with 3 Tbs. ice water and add to the dough. Mix on low until a loose dough is formed. Remove from mixer and form into a ball and wrap in plastic and refrigerate at leasy 2 hours
          Begin to prepre the filling immediately.


          Heat 1 C. heavy cream and 1/4 C. sugar in a sauce pan over med. heat stirring to dissolve the sugar, bring to a boil and reduce heat and simmer 6 mins and is slightly thickened. Remove from the heat and add 1 C. deied cranberries, 1/1/2 C. chopped toasted walnuts and 1/4 tsp. cinnamon. Line a 9" pie plate with plastic wrap and then add the cramberry mixture spreading it evenly. Chill until ready to bake crostata.

          preheat oven to 375. Place the dough on a piece of parchment paper and roll into a 14" circle and 1/8" thick using up to 1/4 C. flour to prevent sticking. Place rolled dough on the parchment paper on to a baking sheet. Then invert the chilled filling on the dough, discard the plastic wrap and begin folding the crust over the filling leaving a window in the middle. Refrigerate 10 minutes

          In a small bowl whisk 1 lg. egg yolk and then brush the top of the crostata with it and sprinkle with 1 tsp. sugar and 2 tsp. finely chopped walnuts. Bake in the center of your over about 30 mins. Allow to cool 15 minutes before serving.
