I rarely ever eat beef, but when I do I want extreme high heat and a nicely formed crust. Roasting doesn't accomplish that. I read in the NYT that they roast their steaks, at least at the NY branch.
the last time i was there i had the grilled bone in ribeye...and it was spectacular
