In downtown LA, I've found Pete's Cafe, Redwood Bar & Grill and J Lounge to be open until at least 2 a.m. (some even later till 4 a.m.)

Toi on Sunset serves Thai food until 4am seven days a week. The location on Wilshire in Santa Monica is open until 3am every day. http://www.toirockinthaifood.com

House of Pies in Los Feliz is open until 2am weekdays, 3am on weekends.

Fred 62 in Los Feliz is 24 hours.

If you are out and about in the East Valley then you should drop by Krua Thai in North Hollywood. They have really excellent noodles like their pad Thai, pad kee mao, rad na and pad see ew. Open until 3:30 A.M., but no alcohol so BYOB if you want a little buzz with your hot chili's.
