Premade Costco Rotisserie Chicken Ideas

So, now that its getting warmer, I like to buy the premade rotisserie chickens from Costco to make dinner without having to heat up the kitchen too much. What's your favorite thing to make with those premade chickens? I will make bbq chicken quesadillas or chicken salad with them usually.

    Enchiladas, tamales, chicken pot pie, creamed chicken, pizza, sandwiches, chopped to top salads, bbq shredded chicken........... That's it for now.....

        Shredd and add to julienned vegetables and herbs and wrap in rice paper skins to make Vietnamise summer rolls (fried are spring rolls)

          Enchiladas or enchilada casserole, taquitos, any casserole that calls for cooked chicken...

            We just tried this on Saturday...delicious! Alton Brown's Enchilada Lasagna...I used 2 canned chipotles with adobo in the sauce instead of the dried chipotles...the sauce is really great! Also the queso fresco is awesome in this...I added fresh chopped cilantro to brighten it up...it was devoured!
