Your question intrigued me, so I Googled and found that Atlas Cafe, on 2nd Av., b/t 4th & 5th Sts., has what you are looking for.

atlas has it, but it's disappointing. I went to check it out last summer and there was plastic (not just one piece, but kind of a lot) mixed through the ice cream! It wasn't all that great even without the unwanted mix-ins. I like the atlas on west 4th by nyu, but the one in the east village is just dirty and gross (I found bits of non-food in my lunch there too on the same trip).
I'd love to hear it if someone finds some elsewhere! It's a real shame we don't have dole whip here.
For soy gelato, try Blackwell's, it's made in nj and i just bought the chocolate gelato from whole foods. it's delicious, much better than the other soy ice creams i've had. whole soy frozen yogurt in creme caramel is on the soft side, though still a frozen pint, and is also a front-runner for my favorite vegan ice cream.

of course immediately after i posted my question, i remembered a couple intriguing frozen treats... babycakes is advertising ice cream sandwiches made with sorbet and their cookies, and lifethyme on 6th ave has homemade frozen "ice cream" sandwiches as well... those i'm confused about because i thought they said "raw" but raw things, according to the doctrines of raw food dieting, can't be frozen i don't think... ? BTW i tryyyy to avoid soy
still none of this is soft serve! all the yogurt hype and blizzard ads are making me crazy! i'll have to try the atlas by nyu.

I don't think that one has the softserve (if they do, they're hiding it well). They do have good vegan baked goods and smoothies though.

Hi there, make sure you do everything you ever wanted to do in life before stepping foot in Kyotofu (48th & 9th). Their soft serve soy ice cream changed me forever.

I think PennyLicks on Bedford in Brooklyn has vegan soft serve.

A new vegan dessert joint recently opened up called Lula's Sweet Apothecary. I haven't tried it yet as I heard they haven't quite gotten the supply/demand kink worked out yet (they were quickly out of a lot of stuff during their first week), but I'm looking forward to checking it out soon.
Here's their website: http://www.lulassweetapothecary.com/
They have some weird hours (closed Sun, Mon & Tues), so check the site for when they're open.

PennyLicks is 100% vegan, and they have two or three flavors of soft serve. Vanilla and Cake Batter are two flavors (don't hold your breath for the cake batter... it's o-k).

Stogo in east village.

I love Stogo, but they don't actually have soft-serve. It's all scoop style.
