Recommendations for Miami

Off to Miami for a conference in a few weeks. Any recommendations? Will be staying downtown. Looking for good, cheap, authentic, spicy Latin eats ... and other culinary experiences, markets, festivals etc. What are the two or three places in Miami that we can't miss? Please help!

Relatively "famous" is Versailles Cuban - not sure if that is what you're looking for, but it's a solid pick. It's definitely inexpensive. I think there is a thread on the board about this topic.
