A quick question about avocado sauce
I want to offer avocado sauce (like guac, only runny) with tacos tomorrow. The recipe says to blend avocado, lime juice, salt, jalapeno,cilantro, water, olive oil and chopped onion until smooth. It also says to serve immediately. I'd like to do as much as possible ahead of time. What would happen if I made the sauce a few hours before the party? Would it discolor or separate?
I'm pretty confident that it wouldn't separate, but I think it could discolour--be sure to lay plastic wrap on the top as a skin to keep air out.
Also, if you're mixing it in a blender, the jalapeno and onion flavours will become stronger if made in advance, as opposed to the last minute--you might want to just stir those parts in, rather than blend.
