shitake mushroom

I got a bargain on fresh shitake mushrooms but now I have more than I can use. Does anyone have some ideas for how to use them? Can they be frozen? Thanks for any ideas and suggestions.

  1. I like fresh shiitake, so different from dried. If I have excess, I pack using my Food Saver and freeze.
    I saute in sesame oil and flavor with oyster sauce and whatever I have handy. Yum.

    1. cream of shitake soup. I would use the organic mushroom broth from Pacific to make it extra easy. serve with chives.

      1. Mushroom risotto! YUMMO Make a bunch then freeze for a later date. Will last a couple of weeks in freezer. Cook in broth, then puree and freeze, or freeze whole. Mushrroms freeze well. Good for so many things: Soups, sauces, flavor up some pasta, etc. :)KQ

        1. Set them top down (stem removed always) on oiled baking dish, and set salmon filets on top and roast at high temp. When you flip them over to serve the mushrooms will sit on top. I like to top w/ a rosemary red wine butter.
