I just bought one last week and cooked six racks of ribs on it in an hour and fifteen minutes. You add the hickory chips before you start cooking. DON'T wet or soak them. The heat from the charcoal in the outer ring makes them smolder, but not catch fire. My family said they were excellent and my wife said they are the best she has had. I also rubbed them with Penzey's Chicago Steak rub.
