What in the world is Beef Pastirma?
Anyone ever had it? What's it like? Where does it come from? Are there lots of versions?
It's a Turkish cured meat, similar to pastrami. In fact, I suspect it may have been the precursor of north American pastrami as we know it. When I had it in Turkey, I found it somewhat drier, and more intensely salty. I don't remember it as being smoky - just cured.
