ISO Mahi Mahi recipe for One

I am not a seafood eater, nothing is going to change that, but my husband loves seafood. I bought 2 filets of Mahi Mahi for him. I am going to use the first filet for Fish Tacos (this is great because I am still make chicken for myself and have tacos as well).

So, what should I make with the other filet? Any ideas?

  1. I just posted this for another mahi mahi recipe seeker. Try it - the tomatoes and shallots really infuse and it's delicious.

    In a saucepan, put the fish (seasoned w/ s&p, maybe rub the bottoms w/ a bit of oil to prevent sticking) in. Add some broth, sliced shallots. Put a few spoonfuls of diced tomatoes (fresh or from can) on top of each piece of fish.
    Bring to a boil then lower to a simmer until cooked (maaaaaybe 10 min).
    Serve with basil chiffonade.

    I usually make couscous or some such side dish. A couscous salad would be nice with some more herbs perhaps.
