summertime salmon recipes anything ring a bell?
Our favorite summer salmon dish is grilling on a cedar plank. You can get them at the grocery store or Williams Sonoma. The plank infuses the salmon with a delicious smoky smell and its easy do because the fish doesn't stick to the grill and then you threw the plank away when you are done. Usually we use the WS portlock seasoning too and its really good.
I've been slow roasting it, drizzled with olive oil, then sprinkled with s&p, on a bed of sliced spring onions, at 225 for anywhere from 15 to 30 minutes (depending on how "done" you like it). I top it with whatever fresh herbs look best -- chives, dill, thyme, etc. and a spritz of lemon juice.
You can't get simpler than grilled salmon. Or salmon baked in parchment, if you don't want to use the grill.
What local ingredients do you have? Here's some things we've done recently with salmon, although some of the ingredients may not be locally in season for you?
1. Place the salmon on a bed of sliced tomatoes (cherry tomatoes are great). Rub with a garlic/salt rub, pepper and olive oil. Sprinkly some brown sugar on it and drizzle orange juice. If you grill this, do the salmon separately and the roast the tomatoes in a foil packet on the side of the grill.
2. Salmon, rosemary, garlic, olive oil.
3. Salmon, garlic, olive oil and lemon zest on a healthy bed of spinach.
4. Any other combination of veggie bottom, salmon, spice rub, liquid drizzle.
