Cafe Azalea in East Asheville starts breakfast during the week at 7 and on the weekends at 8.

tasty & early are a hard combo to come by. jeff c's recs are solid (excepting greenlife, i seem to be in a minority of not being impressed with their in-house offerings), and i'd add stony knob (weaverville).
however, i don't know that any of those meet your early hour requirement. for dining at that hour, pickings are slimmer. tastee diner (haywood rd, weekdays only) is open early, but the food's just fair (although the breakfast sausage, if they don't overcook it, is pretty good - it's from rathbones in clyde). moose cafe opens early (near farmer's market), and many around here (tho not many on this board) consider it be the epitome of southern food, which it may be, but i'd also add the descriptor "not very good" to it. the hot shot cafe (biltmore village) used to be open 24/7, but i don't think that's still the case. however, i do think they still open pretty early. it's been a long while, but i recall the food being on par with tastee diner. cracker barrel opens early; nuff said there. waffle house (various locations) also opens early/all day; again, nuff said there. that's all i can think of at the moment.

Just did a quick internet search, and Mark is right. The Early Girl Eatery opens at 7:30, but Sunny Point and Tupelo Honey don't open until 8:30 and 9:00 respectively, so they may not work if you have to be at work by nine.
I like the breakfast fare at Early Girl, however. In fact, I think it's the best meal they serve.
