A special springtime meal

It looks like spring had finally come to the Northeast and in celebration I wanted to make my SO a great spring meal... now's just the hard part of thinking something up.

I make pasta every other night, so no pasta unless its a unique recipe. And no fish, but I'd love to use any other type of meat. Most importantly I just want to maximize my use of spring-y veggies... can you help me think of something delicious?

And I'm making strawberry shortcake for us to enjoy on the roof...this weather better be here to stay!

  1. When I had a roof top party, this was my menu because a lot of it could be done ahead:
    proscuitto wrapped melon
    crostini topped with goat cheese and caramelized onions and roasted peppers
    Grilled skirt steak (i marinaded it in italian dressing to tenderize it) with chimicuri sauce
    grilled veggie kabobs (squash, tomatoes, peppers, etc)
    black bean, corn, and mango salad
    melon sangria (white sangria)
    grilled make-your-own s'mores
    fresh fruit

    it was a huge hit, especially considering I'm a vegetarian and had never made steak before! Everything was easy, and there was VERY little left over.
