angel hair pasta with pesto and cherry tomatoes
roasted asparagus (10 mins at 400, drizzled with EVOO, salt and pepper)
stir fried sliced baby artichokes, with lemon and white wine
Simple salad of butter lettuce, fresh chopped herbs with a dressing of EVOO, lemon juice, mustard, salt and pepper
Scallops are one of my all time favourite foods-enjoy!
