side dishes w/ scallops

I have some sea scallops that I was planning to pan sear. What should I serve with them?

  1. Mashed potatoes with roasted garlic
    angel hair pasta with pesto and cherry tomatoes
    roasted asparagus (10 mins at 400, drizzled with EVOO, salt and pepper)
    stir fried sliced baby artichokes, with lemon and white wine
    Simple salad of butter lettuce, fresh chopped herbs with a dressing of EVOO, lemon juice, mustard, salt and pepper
    Scallops are one of my all time favourite foods-enjoy!

    1. There is a restaurant in Atlanta that serves seared scallops with Manchego grits - the combo of the crispy scallop with the smooth creaminess of the grits is delicious.

        Thanks for all the suggestions. I ended up making porcini rissotto. The creaminess definitely works with the crispy scallops.
