I want to make some sort of dumpling with leftover shredded lamb.
Bet you could use those dumpling wrappers to make a lamb ravioli.
Let's see, I'd saute whole garlic cloves in olive oil over medium heat until they were browned and soft. Probably take about 5-10 minutes. Chop them up finely with some fresh rosemary. Combine that mixture with your shredded lamb. Make ravioli out of your wrappers.
Now for the sauce. Personally, I'd make something that involved feta or goat cheese. Or even better, mix in the feta or goat cheese with your filling. Maybe a light cream sauce with lemon?

It uses raw, ground lamb, but if you chopped up your cooked lamb nice and fine, it would work well, I believe.
