First time ever in NY, want to be wowed

Two of us couples from Phoeinx going to NY in june but already planning out our trip. We are looking for a truly unique and wonderful experinece. We are staying in Manhattan, but are eager to travel. Please also include some good breakfast spots. Thank you very much.

What cuisines do you all like/want to try? What is your budget? What part of town are you staying in?

We are staying in times square, budget is no issue, and were open on trying different cuisines. French, American, different types of fusions, something that we will absolutely not find in Arizona, and will want to go back to NY for. Thank you.

We travel to New York City from Toronto, Canada at least twice a year and always look forward to visiting these following two restaurants as well as trying new ones everytime:

Breakfast at Barney Greengrass is a NY experience not subject to duplication. I have the nova, eggs and onions with a nice onion roll and a hot cup of coffee.

If you want to go further upscale, Redeye Grill has a great Jazz Brunch.
Of course, some congee in Chinatown makes a nice breakfast as well.
