AllRecipes.com has a bunch of recipes, all invovling powdered milk and water. You can use artificial sweetener. I looked at a can of Nestle fat free SCM and a single can is almost 1200 calories. And $1.49. I sure would like an alternative if their is one.

Thanks!

The sweetner is not just table sugar, it is typically corn syrup and sometimes other sugars. These sugars effect the texture of the finished product. The alternative, with reduced calories, is not an artificle sweetner, but a texture modifier, like caragenean.

Thanks. What is caaragenean, and where can I get some? Never heard of it. Reduced calories is exactly why I am asking this question!

This would be an advanced question for someone else to chime into but I wonder if starting with evaporated milk (in a can) could be helpful for the consistency of what you're trying to come up with? (By the way if you have any 'dollar store' type places near you that are any good, if cost is an issue, I usually see these things quite cheap - both EM and SCM.)

Carrageenan is from seaweed. I just made some bar cookies and didn't have scm so I used evaporated milk (1 cup) and 1 1/2 cups sugar cooked until sugar is melted. You might be able to do the same with splenda and fat free evap milk. I don't know how it would taste, though.
