Pls help bring it together
I am cooking dinner for some friends tonight. One is pregnant and a vegetarian (but she eats fish). The other is on a migraine diet that doesn't allow her to eat cheese and citrus among other things. I have in my mind some kind of pasta dish with shrimps, scallops and squid. I'm thinking more of a garlic, olive oil with fish broth finish, but I'm having trouble making it congeal in my head. Any ideas?

Add shallots, arugula (or watercress) and some quartered grape tomatoes (can your friend with the migraines have these) to your idea.
I'd sautee the shallots in the olive oil until tender, then add garlic for a minute. Add broth and reduce just a bit. Add seafood and tomatoes. Cook til seafood is just about done. Throw in arugula or watercress and finish cooking off seafood. This will give time for greens to wilt just a bit. Add a bit of crushed red pepper flakes if you like. Add pasta and serve. Can sub baby spinach also for the arugula.
