Chiboust mixed (long)

I recently visited this Tarrytown bistro with the recommendations of some on this board and elsewhere.
The space is very cool, exposed brick, pretty sea green colored marble bar, a couple of deuces set up on the left that are divided for privacy by a long opaque white curtain.
The music and atmosphere is extremely subdued.
The wine list...just ok. I expected a lot more from a place calling itself a wine bar.
Choices were on the sparse side and prices were marked up more than average.
As for the food...
Our server told us about a pizza special that had smoked chicken, fresh herbs, and cheese.
She highly recommended it. My friend and I both felt the seasonings were way off, the "crust" was more like a flatbread that a pizza. Not great at all.
We also had a fried goat cheese and beets salad with micro greens and toasted spiced walnuts.
This salad was right on. The dressing wasn't over done, the flavors and textures were beautiful together.
For our entrees my friend ordered the fish special that the server recommended.
Unfortunately, we didn't quite understand when the server told us the name of the fish.
I asked her to describe it to us and she said it was similar to a striped bass, which I love.
So we ordered it. Found out later, after eating it from a woman at at nearby table that it was Escolar, aka the Laxitive Fish. Restaurants should not be serving this fish without a warning.
Onto my entree which is described on the menu as
"Risotto
Roasted yam, escarole, sage, gorgonzola, pignoli and buerre noisette"
It arrived as a bowl of long grain white rice, not aborio (which is a huge pet peeve of mine)
with some lovely vegetables, a nice chunk of gorgonzola....swimming in the "buerre".
There was litterally an inch of butter around the rice.
I asked for some fresh pepper, thinking maybe it would kill the grease, but it just was inedible.
Now, being in the biz. and just not being that picky, I NEVER send things back.
I called over the server, reluctanly and told them I just couldn't eat it.
They came out of the kitchen with apologies from the chef, offering anything in exchange, I declined saying I would love to just have one of their delicious desserts when my guest was finished with her meal.

The desserts were incredible. I had a light as a feather flourless chocolate cake which was served warm. This wasn't your typical lava cake that everyone and their brother serves. This was clearly made by a very talented pastry chef.
My friend had the "chiboust" their signature dessert. This was beautiful to look at and just as amazing to eat. The base is a cashew praline shortbread, layered with a very light citrus
curd (for lack of correct culinary term), and topped with a chiboust cream and white chocolate shavings.
The desserts were on the house, as were two lovely small glasses of dessert wines, and the coffee.
In summation, the service and desserts ensured that I will return. I will most likely go for lunch, and dessert, and sit at the bar. The bartender was the star server of the night, taking care of us while our first server was MIA.

  1. My wife and I went to Chiboust last year, and were quite disappointed. The food wasn't anything special, especially for the relatively high prices. Yes, in agreement with the original poster that the service and desserts were quite good, but that's not enough for us. Just on Main Street in Tarrytown alone, we much prefer Jack & Dyls (although very different kind of food).
