    1. Crab & Corn Chowder

      2 TB butter
      1 C chopped onion
      3/4 C chopped celery
      1 minced garlic clove
3 1/2 cups red potato, cubed into 1 inch pieces
      3 TB AP flour
      2 cups milk (I use 2%)
      1/2 cup heavy cream
      2 tsp chopped fresh thyme
      1/2 tsp ground black pepper
      1/4 tsp ground nutmeg
      1 can cream-style corn (14 3/4 oz)
      1 3/4 C chicken stock
      1 C frozen corn, thawed
      8 oz. lump crabmeat, shelled
      3 TB chopped fresh parsley
      1 tsp salt

Melt butter in saucepan over medium-high heat. Add onion, celery and garlic. Cook until soft and translucent, about 4 min. Add potato, cook 1 min. Sprinkle mixture with flour and cook for one minute, while stirring. Stir in milk, cream, thyme, pepper, nutmeg, creamed corn and stock. Bring to a simmer while stirring over medium heat. Cover, reduce heat and simmer until potato is tender, about 20 minutes, stirring occasionally. Stir in thawed corn, crab meat, parsley and salt, cook for 5 minutes, stirring gently occasionally.
