i've noticed a few restaurants doing smoked and/or grilled fruits in unusual ways and am loving it! anyone else seen local spots doing cool stuff w/ fruit?
I have not seen it in restaurants but I own a grill store and we host grill classes where I have seen chefs grill all kinds of fruit particularly pineapple and apples. Last Saturday a chef quartered a pineapple drizzled rum on it, sprinkled with a dessert rub, then grilled it. The crowd loved it!
Peaches and apricots do really well on the grill. Bobby Flay has several recipes, and I'm sure Michael Chiarello has some grilled fruit creations as well.
