Carnaroli Rice....

Any ideas (other than risotto) for Carnaroli rice? I just acquired some & haven't used it before. Need some ideas and advice...thanks

It will make a nice rice salad. Add your choice of seasonal vegetables (artichokes, asparagus, peas), and a mild vinaigrette, maybe some olives or capers, and tomatoes when they come in season. I also like to add a little saffron.
