Need recipe for chicken pieces - something I can freeze.
38 weeks pregnant and starting to cook! I have a big package of chicken pieces and I'm not sure what I want to do with them. I prefer something stewish with a sauce because I think that freezes the best and I always lean towards something ethnic - Indian, Morrocan, Malaysian. Any thoughts?
Cashew chicken curry on epicurious is easy and tasty, and since the chicken isn't all that crispy in it anyway, would probably freeze well.
Also on epicurious, the chicken tagine w/apricots and almonds is nice (I find it a bit oily if using skin-on chicken pieces such as thighs-- when it's done, you can remove the chicken to a plate and let the sauce cool in the fridge so you can remove some of the excess fat-- which can itself be frozen to stir-fry green beans or other veggies, since it has some nice spice flavor :) )
There are some recent threads on chicken adobo, that's ultra-easy and could also freeze OK (though you won't get it to be crispy when you reheat it, necessarily--but some people prefer a more saucy adobo anyway)
