Veggie Pho

Made without any animal ingredients, anywhere in NYC. Anyone know if such an --ehem--animal exists?

    Lan Cafe on EV has veg pho on menu - the entire place is vegetarian in fact. I haven't been there yet, but maybe you could give it a try.

        Not sure if you went there already, but I happened to drop by there this week with my friends. The veggie pho was tasty. Obviously without the beef/broth it won't taste like traditional pho, but thought of as its own noodle dish it was nice. We also ordered other things too - everything had a home-made taste to it, which I enjoyed (btw if you want more noodles the grilled seitan over rice cellophane was a really good, and I don't usually like seitan). The old couple who own that place is quite friendly.

      If you do find a vegetarian broth, be careful as pho broths are flavored with fish sauce.

        I think you'll have a tough time with this request. Most, if not all, vietnamese restaurants make their soups with beef/pork bones. It's the bones that gives it the flavor. As an alternative, you can purchase pho noodles and make your own broth.

          The Vietnamese restaurant that I dine at has a Home Style Vegetable with Bean Curd Soup (Canh He Dau Hu) under the heading CANH Soup. The Canh He Dau Hu is what you may be looking for. It comes in two sizes, big and enormous. THAI SON, 40-10 74 St, Jackson Heights, across street from Roosevelt/74th St subway station. Under PHO one of the dishes is with Vegetables but the broth is beef. They have a 2nd restaurant on Baxter St in lower Manhattan.
