Pickled (Jalapeno) HB Eggs?

My fridge (and I suspect many others) now houses an abundance of hard cooked eggs. Other than the usual egg salad, deviled eggs, etc., we use them in a pickled prep with beets and sliced onion, and sometimes thinly sliced smoked sausage added, but also have on hand a pint or so of a pretty hot mixed pickle of carrot, jalapeno and garlic.

Any ideas to combo the two into something different and way yum?

  1. I'm not sure if this helps you: I've made pickled eggs many times...but I was making them in bulk so what I remember of my recipe doesn't really help so much. (anything that starts with, "Hard boil 10 dozen eggs" is not terrible practical for most people) I started with a pickled beet egg recipe and used the same ratio of vinegar to beets to eggs but used pickled jalepenos (with their juice) instead of the beets...and subbed in different vinegar for the cider vinegar used in my beet eggs. So point being, pickled eggs are a pretty forgiving item. You could probably even just plop a couple in the jar of pickled carrots/jalepnos/garlic and perhaps up the vinegar a bit, but that should do it just fine.

    One word of warning...if you have even the smallest nick, hang nail or bug bite on your hand, wear gloves. The combination of warm vinegar and jalepeno oils was incredibly painfull.
