Brewing beer, curing meat, or making cheese? Tell us about it

How can I jazz this up?

We're doing an Easter get together tonite and I made a salad with the following: Grilled Chicken, elbow mac, mild cheddar cubes, and cherry tomatoes. For the sauce I mixed jalapeno juice and Crema Mexicana. I divided it all and put jalapeno's in one batch, figured they'd be too hot for the kids. Both batches are incredibly boring. I did the usual salt and pepper but it needs something else. What can I add to make this stand out? I think the Crema Mexicana is just like our heavy cream.

Cilantro, lime juice and red onions.

What about red, yellow and green peppers? Lime juice? How about some scallions? What about some chipotles or chipotles seasoning?

Lime juice and cumin. Maybe some cilantro as well. But the lime juice and cumin should really help.
