Cake Flour

Does anyone know where I can get cake flour and pastry flour in Toronto or in Mississauga? I live in Etobicoke and I have tried a few bulk barn stores in Etobicoke and Mississauga. They only have Cake and Pastry flour available.

Thanks in advance

It's the same thing. I worked as a pastry chef; you can trust me on this one.

I was also reading Mark Bittman's book and he suggested combining corn starch with all purpose to create a lighter flour. Any comments about this? I don't have the measurements thoug.

Plain old 5 Roses C&P flour works for me. You can often find Swan'sDown cake flour at the bigger Loblaws. Failing that, check in with the cake mavens at McCall's for sources.Lower protein content is what you're after, right?
