Denver - Breakfast near Hyatt Regency?

I am staying at the Hyatt Regency near the Convention Centre and am wondering where I should go for a great breakfast?

Walking distance would be best, but I don't mind traveling for the right meal. I like all food, especially authenic regional cuisine (Mexican, Southwestern, etc.).

    If you consider yourself a flapjack fan, go to Snooze (it's a 10-15 minute walk from the Hyatt). Amazing pancakes, cool vibe, and strong java.

      gastronaughty - flapjacks sound just about right for a trip to Colorado.

          I love Snooze! Great Suggestion!

          They have wonderful breakfast tacos as well for that Southwestern request.
