International Cooking Classes

Anyone have any experience with European cooking classes? I'm looking for one day classes in Tuscany, Provence and Spain (flexible on location). There are loads on the internet but I'm curious if anyone has any personal recommendations.

i've taken a bunch of classes at iceculinary on 23rd street. They have all been great. and the thai class I took was the best thai food i've had since i was in thailand.

Ah -- sorry, I should have been clearer. I meant classes actually in Europe, I'll be traveling this fall.
