        <content>Just picked up some funky pudding molds today and they came with a recipe book that calls for isinglass.  What is a more common alternative to isinglass?  I was thinking pectin but can someone confirm?

      <content>Isinglass is a compound made from the stomach or air bladder of sturgeons and used as a stiffening agent. Use pure gelatin as a substitute.</content>

      <content>Yes, gelatin. Either in sheets or powdered form.
Other alternatives, depending on the pudding: arrowroot, cornstarch, agar agar, instant tapioca. The use of each is discussed at the websites below.
