What to serve for 25

As usual, we are having 25 for seder. Someone is bringing a brisket but it will only be a 3 pounder after cooking. We are also having capon and poached salmon (8 lbs). Any ideas for another meat dish other than brisket. Thanks.

    1. We're having Chicken Marbella from the Silver Palate cookbook. I've never made it before but there have been rave reviews on the home cooking board and it looks really easy so that's it. The recipe uses 4 chickens - but I bought just breasts and thighs. Probably about 5 or 6 lbs of each. A friend is bringing brisket as well.

        How about a Mina de Carne - a kind of meat "lasagne" made with matzoh instead of noodles? It's easy enough, you can use spinach or eggplant with the meat. I sometimes use artichokes. Joan Nathan has a basic recipe in her Jewish Holiday Cookbook. You can make it in advance, which is a nice aspect, and leftovers keep well.

      2. At the risk of sounding mundane, I am doing a brined rotisserie chicken... I like the simplicity and juiciness of the meats to complement the unique side dishes. Then again, I love rotisserie chicken almost any time of the day or year.
