Flourless Chocolate Cake
I'm thinking about making a flourless chocolate cake for Passover this year.
I'm not concerned with the milk/meat issue (neither are my guests), so dairy is fine.
I've found some good recipes on Epicurious, they're all similar.
What I'm wondering is, how long in advance can I make this and serve it Monday night?

Since you don't mind dairy, have a look at Julia Child's Eminence Brune (I think that's the spelling - my French is non-existent). There's not a whole lot in there except tons of chocolate and butter and then some more for the ganache. The texture is beautifully smooth, not like a pudding, but fine-crumbed, and if you use high quality chocolate the taste is amazing. The major drawback is the cost of the ingredients but this is a case of garbage in, garbage out.
This one is my first choice dairy Passover go-to cake.
