How early to make meringue?

I'm making a lemon meringue pie this weekend and like to brown meringue when my guests arrive so lemon filling will still be warm when we have dessert. Anyone have a sense of how early I can make the meringue and top pie with it before baking? I'm in LA, but it's not hot here yet. Thanks.

  1. I'm not sure meringue will keep without being baked.
    I'd recommend topping your pie right before baking. Otherwise, you'll have to bake ahead of time.
