Fresh strawberry ideas?

Augusta Mar 29, 2007 12:35 PM

Hi, I have some fresh strawberries that I'd like to make into some kind of dessert...I also have buttermilk and ricotta cheese sitting in my fridge that i'd like to use up before they spoil. Any thoughts on how to combine the strawberries w/the buttermilk and ricotta and make it into something yummy?

Thanks all for the great suggestions!
I'll give it a go this weekend...probably try out that whipped ricotta recipe and maybe some buttermilk scones :)

First of all, I am totally jealous of the strawberries! Strawberries are a couple of months away, for me.

Now, one of my all-time favourite recipes - mascerated berries with whipped, sweetened ricotta. http://www.epicurious.com/recipes/rec...

I mascerate my berries in whatever alcohol I've got lying around, rather than lemon juice and sugar. Creme de cassis, cognac and rum are all particularly lovely. The longer you can soak them (overnight is ideal), the sweeter, and juicier, and generally more earth-shattering this will be.

How about crepes with a sweetened ricotta and strawberry topping?

          1. How about a riff on strawberry shortcake: buttermilk scones, fresh strawberries, and lightly sweetened vanilla flavoured ricotta?
