extra coconut rice... what to do w/ it?

So... once again...my ability to overestimate necessary rice quantities has me left baffled...
After finishing my dinner last night, I realized that I have POUNDS of extra coconut rice...
Any thoughts on a new use for it? other things to eat it with?

      Have it with soup - tomato soup would be fantastic, or I have a black bean soup with coconut rice recipe on my blog which has been pretty popular. If it is sticky enough you could also warm it up, spread it in a layer on a piece of waxed paper or plastic wrap, and make a rice wrap filled with things like chopped boiled egg, pickled vegetables, leftover cooked meat, or other sandwich type fillings.

        haha... would you believe that that's what i made? b/c i had seen it there?!
        was delish... but i, um, sort of have a habit of not totally following recipes... oops... :o)
        hence the large amounts of rice!
        second idea sound delish as well!

        This isn't quite a response to "new use for it" but what about portioning and freezing it?

        Rice freezes very well, and I'll bet you'll get sick of it if you try to eat it all over the next couple days.

            Make up some coconut rice pudding, that is if you like rice pudding, that should use up a lot.

              I made some coconut rice cakes the other night; I added some chopped scallions and a beaten egg to hold it together. It was great.

                Sautee up some shrimp and stuff the shrimp, rice and herbs into some large heirloom tomatoes. Bake for about 10-15 minutes and thats it! It wont use up a ton of the rice, but its a good way to start!
