David Eyre's Pancakes - Muffin Variation

Does anyone have any ideas about other fillings that can be used with the muffin variation of David Eyre's Baked pancakes, as described in a recent New York Times Article:

I would like to try them as muffins, but I'd like to try other versions than the Moroccan Chicken Dumplings (muffins) that the article talks about. I'd be interested in sweet dessert type, or savory variations.

  1. They look a little like mini-german pancakes. How about adding ham and using maple syrup on them? It would be really good if you could get some stroop instead of maple syrup.
