Mystery item at Madrid tapas bar

  • 2

Hi all you Spain chowhounds, I just posted a topic on the General board about a mystery item at a Madrid tapas bar. Can you help me identify what it is? Thanks.

  1. Those are zarajos. A specialty of Cuenca (in La Mancha), but you can get them all over Madrid as bar food. They are suckling lamb intestines wrapped around sticks (from grapevines, I think). They cut them and fry them up...
