Duck Breast with Quince Compote (fruit varies - change it with the season)

D'Artagnan's website has a basic recipe for preparing "magret" (duck breast). It's very easy and always turns out splendidly. The sauce is a reduction, so you could add a fruit liquor + diced pieces of a corresponding fruit.
