Recipe that uses both broccoli and spaghetti squash?

I'm trying to use up my remaining vegetables tonight before my new basket arrives from our local organic farm tomorrow. Anyone have a good recipe that includes broccoli and squash together, preferrably something light? I've thought of vegetable soup, but am in the mood for something a little more interesting.

  1. Just roast the spaghetti squash, and fork as usual and serve with a tomato sauce with the broccoli added. Or you could skip the tomato sauce and just do an olive oil, garlic, broccoli sauce with parmesan cheese. I love parmesan cheese on spaghetti squash.

    1. I'd steam the broccoli & nuke the squash, pour a little warmed vinagrette or Caesar style dressing over top and grate on some parmesan over top, S&P and toss. Add some toasted pine nuts if you have them. It's one of my favorite meals.

        You could substitute brocolli for the cucumbers (and leave off the salmon) and it would be tasty.

        1. The Food & Wine salad looks very tasty, and light, too. I've decided to roast a chicken tonight, so it'll be nice to have something cold and citrusy alongside. Thanks.

          1. You could make a chunky broccoli sauce for the squash - basically a pesto recipe using broccoli. It's how I use my broc once it goes a little soft.

              Agreed. Lora Brody has a recipe. She steams broccoli (then pan fries it, a step I omit) then puts it in the processor with juice of a lemon, clove or two of garlic and 1/4 cup evoo. Process, mix with noodles (or squash) and shave some cheese on top. My kids love it.
