Cinnamon Buns

I have a recipe for cinnamon buns that I really want to make, though I had a question about proofing them. The recipe says you can stall the process by refrigeration, you just have to let them proof at room temp for 3-4 hours before baking. I need them done by 7:00 in the morning, so I'd have to get up at 3:00 to take them out of the frig. Is there anyway I could just take them out before I go to bed (11:00) and let them proof till 6:00 a.m.?

    1. I take them out of the refrigerator about half an hour before baking and have had no problems.
